Lalume is a Treixadura variety white wine produced by the Dominio do Bibei winery in the D.O Ribeira Sacra.
Dominio do Bibei started out in 2000 with a group of young winemakers who were desperate to show off the qualities of the Ribeira Sacra region in the most natural way. Sponsored by Sara Pérez and René Barbier, children of the forces behind the Priorat revival, the winery is located in the town of Langullo (Orense). A new construction that is integrated into the natural landscape in a fragmented manner and that is based on the traditional model of building on slopes to use gravity as a way to make wine.
The diverse terrain in Ribeira Sacra, with altitudes ranging from 200 to 700 metres above sea level, gives the native varieties a great range of nuances. The vineyards are between 10 and 30 years old and planted in granitic, clayey sand and shale soils. Lalume grapes are harvested manually and selectively into small boxes.
In the winery, they go through a thorough manual selection process of clusters and plots. Winemaking takes place separately by area, soil and height. Depending on origin, the grapes ferment in barrels, foudres, and concrete or stainless steel tanks at a controlled temperature between 12 and 17ºC. Then Lalume is aged in stainless steel tanks in contact with its fine lees.
Lalume is a white wine that encompasses the expression of each of the diverse Ribeira Sacra terroirs in the most natural way.
