Fermentation in controlled temperature oak vats. The vineyard is surrounded by trees and the vineyards are arranged in a North-South orientation, on the top of a south-facing hill, 60 meters above the Sado river valley. The days are hot and the nights cold. The grapes are harvested and selected by hand.
